1 large salmon fillet
3/4 cup melted butter or margarine
3/4 cup brown sugar
Place salmon in glass baking dish with a light layer of cooking spray on bottom of dish. Melt butter and mix in brown sugar until consistency is thick like a paste. Baste a thick layer of glaze on top of salmon [it will form candied shell during baking process]. Bake uncovered @ 400 degrees for 20 minutes.
CRANBERRY ALMOND RICE PILAF
2 cups minute rice
2 cups water
1/2 cup dried cranberries
1/2 cup slivered almonds
Prepare rice as directed. Mix in cranberries and almonds during the reduced heat and simmer process [last 5 minutes]. Garnish with a sprinkle of nutmeg on top.
STRAWBERRY SPINACH PARFAIT
1 bag fresh spinach leaves
1 pint strawberries halved
1 cup feta cheese
1 bottle store bought vinaigrette of choice [recommend raspberry vinaigrette or poppyseed]. Keep it simple!
Prepare in small individual bowls by shredding spinach leaves into smaller portions. Add a layer of fresh cut strawberries and top with feta cheese. Drizzle dressing of choice or enjoy without dressing.
Serve with a nice glass of prosecco and enjoy!!
